Banana Bread

A miracle happened today--I baked banana bread. Not only that. This wasn't something I baked for Witt and watched him eat, I could eat it and it was undeniably the best banana bread I have ever put in my mouth.

In fact- it's more like banana cake. But since the ingredients are so wholesome I would totally eat this for breakfast.

Moist, buttery with just enough banana flavor not to be over powering but so that you know for sure you are eating banana bread.

Plus- its so easy!

Elana's Pantry Banana Cake

I made mine in one normal loaf pan with the same time and temp as the recipe. I changed the oil in the recipe, for the original go here.

Ingredients:

3 cups almond flour (not almond meal)
1 teaspoon sea salt
1 teaspoon baking soda
1/4 cup honey or agave nectar (I used Witt's honey)
1/4 cup coconut oil, melted
3 large eggs
1 tablespoon vanilla extract
2 ripe banana's mashed, about 1 cup

Mix dry ingredients in a bowl. In mixer, blend wet ingredients. Then stir together with the dry ingredients. Pour and smooth into loaf pan. I lined my loaf pan with parchment paper to help it slide right out.

Bake at 350 for 40 minutes.
