Cant You See The Light's Turned Green

This weekend I helped with a beautiful wedding. It was the first time I've been just behind the scenes; setting up, helping put food out, refilling sangria pitchers and collapsing on the couch at home with a rum and diet coke afterwards. 

I loved it. 

I did get a chance to dance to a fabulous bluegrass band with my best friend and eat some delicious barbecue which was smoked on the spot.

It was such a gorgeous night and everything went so smoothly. 
The bride's friend made this dress which was stunning. 
There were handmade fabric flags hanging from the rafters and beautiful burlap lace runners on every table.

I love weddings.

Sunday my sister and her family were in town so my mom and I planned a surprise birthday brunch for her since she is turning 30 this year.

We had a mimosa bar and lots of yummy breakfast foods like sausage casserole, goat cheese biscuits with Witt's honey, vegan coffee cake and bacon (of course).

It was such a fun time of celebrating Lauren.  

I'm also celebrating the fact that I have a new job!!
It's an amazing opportunity and it, of course, came along right when I needed it. 

God is good.

I made this gluten-free cake from Elana's Pantry and it turned out really good. 
It has a subtle chocolate flavor with lots of yummy coconut.

It's one of those cakes you'll want to make for a special occasion.
 It takes 10 eggs! You can find coconut flour at most grocery stores and nearly all health food stores. But it's worth all the extra ingredients, moist, full of flavor and delicious.

I made up a butter cream using stevia, butter and coconut oil, but you could use any butter cream recipe. I did this in two cake pans and spread butter cream between the layers and on top. On top of each layer of butter cream I sprinkled a good amount of unsweetened coconut. I topped with some pearl beads and rose buds and a sparkly 3 0 candle which refused to light outside but which looked so lovely.







Thursday night Witt and I went to hear Bombadil at the npr Back Porch Music concert. If you are close to Durham, every Thursday night they have a different band and it's free. We love Bombadil so we raced over after work. 

This is my favorite song of theirs.
