DIY Peppermint Extract

This morning was so nice and cool we opened all the windows
 and sat outside to drink coffee.

The front of our house is becoming overgrown
 with mint and Witt plans to cut it down soon.

 If you've ever planted mint you know it pops right back up 
and has the tendency to spread like crazy.

This time I wanted to do something with the mint 
besides just throw it out and 
so I made probably the easiest peppermint
 extract recipe from here.

All you need is vodka and mint leaves.
I found the cheapest vodka and some cute jars to 
store it in.

Peppermint Extract

Mint leaves, washed and dried

I used about a cup of vodka for a cup of mint leaves. Crush and tear the leaves in your hand before you stuff them in the jar to release the oils. Fill the jar with vodka and put a lid on tightly.

 The extract will be ready in about 3-4 months. Strain the leaves and store the extract. Perfect for recipes!
