Saturday Night

 It was a good weekend. I'm sitting on the couch listening to the rain on the roof with Olive on my lap in my clean house. I really love being at home.
Yesterday I worked on the office and then organized and cleaned our house. Like, all day.
When you have a tiny house the smallest bit of clutter really makes the house look messy. I sorted, threw away and tried to find new places for everything. When I was finally finished I went to the grocery store to get ready for our friends, Cathy and Patrick, to come over for dinner. 
When I walked back in the door it was a lovely feeling. 
There is something about a clean house that just makes me feel peaceful. 

I thought it might rain last night but we were able to eat outside which was so nice!

We grilled chicken and had salad and oven fries under the trees. 
I made hummus from my Rachel Ray 30 minute get togethers cookbook. It was really delicious with roasted red peppers and rosemary. I served mine with cucumbers and whole wheat pita.

Chickpea and Rosemary Dip

2 cans (15 ounce each) chickpeas, drained
1 6-ounce jar roasted red peppers, drained
Juice of 1/2 lemon
2 cloves garlic, peeled
4 stems fresh rosemary, leaves stripped from stem
Salt and pepper to taste
Whole wheat pita
2 tablespoons melted butter
1 pint grape tomatoes
Zuchinni, sliced into fries
Cucumber, sliced into rounds

Combine chickpeas, roasted red peppers, lemon juice, garlic, rosemary, salt and pepper in food processor until smooth. Heat oven to 450. Brush pita with butter and cook in oven until golden. Slice into triangles. Serve hummus with pita, zuchinni, cucumber and grape tomatoes.
