It's That Time

It was a lovely Sunday. I'm ready for Spring. And I am so happy that the days are getting longer. I'm finally able to go by the park after work and run again and I'm training for another half-marathon. Running is in my blood, people. I don't know why I torture myself with these races but I love them.

Not only the half-marathon but there are other exciting things on the horizon right now. I have a super talented friend who is displaying her photography in a local wine bar. I might be displaying a collection of paintings alongside hers late summer. I have a lot of work to do to get ready! Like a lot of pieces to prepare! But I am super excited. 
Also I'm revamping my Etsy. Witt and I love antiquing and yard selling and I thought I would add some of our finds to my Etsy (my Mom is already doing this like a boss). I'm working on more art to put up there too. 

Annnnd we are house hunting! I can't really imagine leaving The Little Brick House but I am so ready for a place of our own. I've fallen in love with a downtown affair which has a sloping roof and a huge yard perfect for a garden. But that's all I'm saying because I don't want to get my hopes up. 

So that's Spring for you, all full of new beginnings. 

I was so happy with my hair this morning that I took some pictures of it. I don't want to bore ya'll with No Poo, but it's just going so well.

Remember when I canned all those tomatoes last summer? It has been so great having them this winter for chilies and soups and all that good stuff. I think I only have one jar left which is sad, except it's almost tomato season again!

 I made a really good smokey sausage, spinach and bean soup last night. It was so savory and hearty, perfect for the cold weather we've been having. I threw together a lot of ingredients I had in the house and it reminds me of a version of Italian wedding soup. Here it is.




Gypsy Slow Down


Smoked Sausage, Spinach and Tomato Soup

10 ounces frozen spinach
1 onion, diced
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup red wine
14 ounces smoked turkey sausage, sliced into thin rounds
2 cups whole tomatoes, diced
1 14 ounce can white cannellini beans
4 cups chicken broth
2/3 cups uncooked whole wheat macaroni noodles
Shredded Italian blend cheese (optional)


In soup pan, saute onion in olive oil until soft. Add spinach, garlic and tomatoes. Pour wine over and let simmer until wine is cooked out, about 5 minutes. Add the turkey, beans and chicken broth. Simmer for 20-30 minutes until sausage is cooked through and to let flavors meld. Add macaroni and cook for additional 5 minutes. Top with shredded cheese.

  3. I SO need to revamp my Etsy, too. My pictures are horrendous. It's so hard to get good lighting in Alaska - our house doesn't get any sun until really late afternoon, that is IF we're having a sunny day...haha.

  4. I hope you get that downtown house. I love the atmosphere of living downtown in cities and I miss it. Glad the no poo is going well. I need to get up the courage and do it.

  8. Your hair really does look amazing. Is that what it does air drying or did you blow dry/curl it? Either way, gorgeous.
