Bacon Wrapped Jalapeno Peppers Stuffed with Sausage and Cheese

In a funny turn of events Pepper, who used to hide under the bed and cry, loves me. 

He follows me around the house and sits with me on the couch. I always thought friendly little Olive would like me the most but she loves Witt. Last night while Witt was at his beekeeping class I was sitting on the sofa watching Tierra eat a giant cheeseburger while she faked hypothermia on the Bachelor and Olive was sitting on the cat tree ignoring me. As soon as Witt was home and on the couch though, down hops Olive onto his lap to cuddle. He is her favorite. That's ok with me. This morning she did come over and sit on my face while I was sleeping so I don't feel completely rejected.

So for the super bowl our friends Kristin and Jonathan had a party and I made fried pickles. I also made the mistake of showing Witt these really amazing looking sausage and cheese jalapenos wrapped in bacon that I saw on Pinterest. So then I had to make them too. They were actually easy and so delicious. Scraping out the seeds made them more of a medium than super spicy.

Next time I will use toothpicks to hold the bacon on since some of the peppers went crazy and hopped around the pan. I mixed up a chipotle ranch dip with ranch dressing, sour cream, chili powder, red peppers, cumin and onion powder for dipping.

Here is the original recipe and here's mine with my modifications. 


Bacon Wrapped Jalepino Peppers Stuffed with Cheese and Sausage

Ingredients

12 jalapeno peppers
12 bacon slices, cut in half
12 mini sausages or smokies, cooked and halved
8 ounces of cream cheese
1 cup grated chedder cheese
1 tsp chipotle powder
1 tsp onion powder
1 tsp garlic powder



Slice the jalapenos lengthwise. Using a spoon, remove the seeds and membrane. Mix the cream cheese, chedder and spices until smooth. Fill the hollowed out portion of the peppers with the cheese mixture. Place one half of the sausage on top of the cream cheese. Wrap the half slice of bacon around the jalapeno. If the bacon is not staying tightly wrapped, it may be necessary to use a toothpick to hold it in place. Bake at 450 for 15-20 minutes or until bacon is cooked through.

    And...yum. Fried pickles...ANYTHING pickles...total weakness of mine.
