Happy Thanksgiving!

"No eye has heard, no mind has conceived what God has prepared for those who love him."
1 Corinthians 2:9

This morning I am getting ready to go to work but Thanksgiving isn't over for us. We had a great time celebrating with my family and tonight we are going to Witt's parents to celebrate with them (hence my second attempt at a cranberry salad, above. Success!). I like it when the holidays stretch out because that's what from here to January feels like. I am listening to Christmas music! If I could run out and get a tree I would, but I won't. Tomorrow I think I will decorate. Now that I'm older, I realize that what I love best about the holidays are these days before Christmas, when all the fun happens.

I love the verse up there because to me it's like we will always have something to look forward to, there will always be exciting things on the horizon. I am thankful for that and excited about the future and this coming year.

In case you ate too much over Thanksgiving (like that would ever happen) here is a really fabulous salad dressings I have made lately that will make you excited to have a salad (with some leftover turkey maybe?)

Ginger Dressing

I love the ginger dressing in the store but it's so expensive for the amount. I get maybe three salads out of it (I do have a heavy hand, but it's just so good). This is easy and tastes delicious.

1/4 cup olive oil
4 tablespoons sesame seed oil
5 tablespoons freshly grated ginger
1 tablespoon sesame seeds
5 tablespoons soy sauce
4 tablespoons lime juice
2 smashed garlic cloves

Shake everything up in a jar and let infuse for a while. Remove garlic before serving.
