Pine Trees and Pina Coladas

We just spent a week at my parent's lake cottage on Aylen Lake in Ontario. I grew up spending the summer in Canada. It's a strange place to have a lake cottage when you live in North Carolina but looking back, it never seemed strange growing up. It was a good part of life, outhouse and kerosene lamps and all. Since Witt loves the lake, last year being his first time visiting, I agreed to go again this year. Things have changed and he has no idea what it used to be like, of course, since this year they even installed a dishwasher. But though it may not be quite as rustic, it's still a bit of a wilderness to me.

Last year we flew up but we braved the drive this time, all 18 plus hours. We went by Niagara Falls, Witt's first time seeing them.

The lake is lovely but I'm a city girl at heart and I can only go for so many canoe rides and swims. I am the one who sits on the dock in full make-up. I am the outcast in the family. However, after I got over the fact that I was indeed trapped at the lake for a full week (the roads to town thirty minutes away are quite rustic) I tried to embrace my surroundings. Who couldn't think this was beautiful?

And while I might not be the one planning fishing trips or living in my bathing suit, I am the daughter who loves to cook, some of my favorite memories with my mom at the cottage, and the one who was making pina colada's (and from scratch, too) for everyone on the dock.

So easy and so much better than the overly sweet mixes. Just blend coconut milk, chunks of pineapple, ice and rum to taste in a blender. Summer in a glass. If only we'd been drinking it in the tropics...just kidding (sort of).

It was great to spend time together and I had a lot of fun seeing Witt enjoy himself...sometimes in interesting ways.

I am glad we went, but it's always good to come home. Especially when you are experiencing your first vegetable garden...
