Strawberries and Outdoor Eatin'

It's that time of year- when the days are warm and the evenings are cool. Perfect for grilling out. And bonfires.

There's nothing like steak and peppers, roasted broccoli and good old southern black eyed peas to complete an outdoor meal. And a lovely spirited strawberry tea.

We celebrated Mother's Day on Sunday with my in-laws and had delicious steaks. We went home with two fresh steaks to cook and also some fresh picked strawberries. We grilled them this week and they were delicious. 

If the meat is good you don't even need a marinade, maybe just some seasoning. The peppers I sauteed with onions and drizzled with balsamic vinaigrette while they were cooking.

The black eyed peas I cooked in chicken broth with a strip of bacon. I roasted the broccoli with garlic and olive oil. The refreshing strawberry tea recipe is as follows.

This recipe is from the latest Food Network Magazine and is by Bobby Flay. He uses bourbon and blackberries but I changed it to strawberries and rum. So refreshing. I used a very small amount of Stevia instead of the sugar because I'm not big on sweet drinks. You can add or take away from that to taste.

Strawberry Rum Iced Tea (serves about four)

3 cups fresh strawberries
1/4 cup sugar or a few packets Stevia
2 tablespoons fresh mint leaves, chopped
6 black tea bags 
Good quality rum, like Bacardi

Combine the strawberries, sweetener and mint leaves in a bowl. Mash with a potato masher until mixed well and let it sit while making the tea. Bring 3 cups of water to a boil and add tea bags. Take off of burner and let steep for two to three minutes. Add to berry mixture and chill for two hours (or use an ice bath for quicker cooling). Strain the berry mixture and reserve the juice.

 In a tall glass add ice and 2 ounces rum or to taste. Pour berry tea juice over ice and mix. Add a mint sprig and a few whole berries for garnish.
