Really Easy Peanut Butter Cookies

If you have ever tried to live life without sugar than you know how hard it is to find good baking recipes that are sugar free. Especially cookies. The other day I found a recipe that is so simple it's almost ridiculous. I think I have made these before but forgot about them and Paula Dean brought them back to my attention. They are sweet but not too sweet and so delicious. I put chocolate chips in mine and then left some plain for Mr. Non-Chocolate (how could anyone really be that?). Here are Paula's four ingredient peanut butter cookies:

Magical Peanut Butter Cookies

1 cup creamy peanut butter (I like Jeff Natural)
1 1/3 cup Splenda 
1 egg
1 teaspoon vanilla extract

Preheat oven to 350. Grease a large baking sheet. Combine 1 cup Splenda and all other ingredients in mixing bowl and stir well. Roll the dough into balls about the size of a walnut. Place the balls on the baking sheet. With a fork, dipped in Splenda to prevent sticking, press a criss-cross design on each cookie. Bake for 12 minutes. Remove from the oven and sprinkle with remaining Splenda.
