Baby Bell Peppers with Feta and Mint

The grill has gotten a lot of use lately, despite the rain. The mint that we took from a friend's yard the other day came in handy with this delicious baby bell pepper recipe with feta. The flavors were so good.

This recipe is from Food Network. Even though it wouldn't be as pretty, I might take the ends off of the peppers and scrape the seeds out next time. Not a lot of fun trying to eat around them.

Baby Bell Peppers with Feta and Mint

Preheat a grill to high. Toss 1 pound baby bell peppers or quartered regular peppers with 2 tablespoons olive oil, season with salt and red pepper flakes. Grill, turning, until blistered, about 10 minutes. Transfer to a bowl and toss with 1 tablespoon olive oil, some chopped mint and the juice of 1/2 lemon. Top with crumbled feta.
