Savory Peppers

Gypsy Slow Down

I love bell peppers. Especially red ones. Witt loves stuffed peppers and I like them too, they are delicious and easy, especially in the slow cooker.

Stuffed Bell Peppers

1 pound ground beef
1 onion, chopped
6 ounces mushrooms, chopped
2 cloves garlic, minced
1/2 cup white wine
1/3 cup tomato paste
1 4-ounce can diced green chilies
3 tablespoons fresh basil, chopped
1/4 teaspoon salt
4 bell peppers (any colors)
1 cup shredded jack, mozzarella or chedder cheese
Salt and Pepper

Brown beef on stove and drain. Set aside. Saute onions until they start to brown (in dry pan). Add mushrooms and saute until soft. Add white wine and simmer off, about four minutes. Add tomato paste and green chilies to pan and stir until combined. Mix in ground beef, basil and salt. Pepper to taste. Cut off the tops of the peppers and remove seeds. Stuff peppers with filling and place in slow cooker. Cook on low for 7 hours or high for 3 1/2 hours. About fifteen minutes before serving, sprinkle peppers with cheese and let melt. Yum.
