Fiesta and Violins

The weather was warm and windy today, like the hot plains of the west, only much more humid. So humid that my poor pansies wilted in the window box. I'm hoping I revived them with a shower from the hose...we will see. My mom was in town to visit a music store nearby, to look at a new violin for my sister Nan who outgrew hers. Nan is now as tall as me, almost 5'11 (only much more musical) and like a willowy tree. Lovely. Since I didn't have to work today they all stopped by. I made a southwestern stew with chicken, corn and beans, and we sat outside in my new patio furniture. It was a perfect fiesta kind of day.

We are getting the patio ready for outdoor party season (in my words) and these lights I found at target are so cute and festive.

After the music store, where we were serenaded with songs by the talented owner, we went to a plant sale where my mother found three flats full of beautiful flowers. I found more vegetables for our garden; cabbage, green peppers, squash, zuchinni and eggplant and at very reasonable prices.

My mom and sisters left with Gigi and flowers in tow, but we'll see each other again soon.


Southwestern Stew (makes a big pot)
I made this stew up as I went along and I think you could be creative with it, adding peppers or mushrooms or other veggies.

1 large onion
3 cloves garlic
2 cups frozen corn
2 14.5-ounce cans black beans
1 29-ounce can tomato sauce
1 14.5-ounce can diced tomatoes
4 cups chicken broth
2 cups chopped cooked chicken (I used a rotisserie chicken I bought)
Handful of fresh cilantro and basil, chopped
2 teaspoons hot sauce (optional)
1 cup cheddar cheese
1 cup sour cream
1 avocado (optional)

Saute onions until golden. Add garlic and corn and saute for two minutes. Add black beans, tomato sauce, diced tomatoes, chicken broth, chicken and herbs. Simmer at least ten minutes. Add hot sauce and stir. Serve with grated cheese, sour cream and avocado slices on top.
